Lime-in-the-Coconut Drumsticks

We tried this out the other night.  It was definitely tasty and W really liked it.  I have SERIOUS issues with drumsticks.  It's just a really weird piece of meat (in my opinion).  I would definitely use the marinate again, but maybe on a different cut of chicken.  If you like drumsticks, this one's for you:

Ingredients:
3 cloves garlic, crushed
3 Tbsp chopped ginger
1 C chopped scallions (white and green parts)
1 C cilantro
1/4 tsp cayenne
1/3 C honey
1 C coconut milk
1/3 C lime juice, plus 1 tsp grated zest
10 skin on drumsticks

Directions:
Combine all ingredients (except chicken) in blender, puree.  Cut 2 slits in each drumstick, marinade in coconut mixture at least 1 hour.  Transfer chicken to rack placed on foil-lined baking sheet; season.  Bake at 450 for 20 minutes, flip and bake until cooked through, 10 minutes.  (Mine definitely took longer than this.  I'd say cook 30 minutes, flip for 20 more)

For sides I sliced sweet potatoes very thin, seasoned with some EVOO, salt & pepper.  Baked at 450 until crisp.  Dipped in guacamole and salsa.

We also had broccoli.  It was random, but the kids really like it.
