Crispy Pork

BEST pork chops I've EVER had!!!  Seriously!!  Thanks Rachel Ray.

1.  Season pork with salt and pepper
2.  dip in egg
3.  dip in almond flour
4.  let sit about 10 minutes.
5.  cook in a small amount of preheated olive oil over medium heat.  cook 3-4 minutes on one side, flip for another 3-4 minutes.  Remove from the heat and let pork it in pan for another 3 minutes.

The Spinach Salad had a fresh tangerine dressing.  Yummy!    You need: 2 tsp zest, 1/4 C tangerine juice, 2 Tbsp EVOO, 1/4 tsp salt, 1/4 tsp pepper.  Whisk all ingredients together.

Place sliced red onion in small bowl and marinade in 1 Tbsp of dressing.  When ready to serve meal, toss spinach with onions and remaining dressing.
