
1st, I just realized some of my recipes may not be "paleo" by definition. True Paleo uses NO dairy at all. Wes is strict on that, I am not. THIS recipe IS Paleo.
For sauce, you can do whatever you like that has no sugar and no random oils in it (I think!). I use a lg. can of spaghetti sauce, sm. can tomato paste,
I just learned that Spaghetti Squash is the most amazing thing EVER! Why have I never used it before? It's so simple to use! Cut in half, clean out like a pumpkin, and bake upside down for 40 minutes at 350. Then, use a fork to clean it out. It comes out looking like noodles!! (The picture is of the cleaned out squash. 2 made a ton!) The bowl is of the "noodles" that we had leftover.
The only comment I had was from Elliot saying "Mommy, did you make the noodles?" I just said yes. Well, then we told her God made them and Mommy just helped cook them. All of the kids devoured them! So much more flavorful than plain old pasta. I'm hoping the leftovers freeze well so I can use them again. If so, I think I will have a day of "noodle" making and freeze them for ease of use (especially when Spaghetti Squash is out of season).
