Breakfast casserole

I quickly realized I wouldn't be able to make a big meal every morning for breakfast. I found a few recipes for Paleo breakfast casseroles online and combined them to make something that sounded good to me. Here's the recipe. It was great (maybe even better) reheated!

1 lb sausage cooked
1 shredded yam
some cabbage shredded
1/2 onion
1/2 green pepper
2 handful's spinach
10 eggs
cheese (optional)

Cook sausage. Drain. Sautee the yam, cabbage, & onion in some sausage grease :-) Layer a 9x13 pan with sausage, then yam mixture. Sautee the spinach and green peppers (I suppose you could just add this when you do the yams). Make a layer on top of the other ingredients.

I made all of that the night before and refrigerated. The next morning I whisked up the 10 eggs and dumped them on top. Put cheese on top of 1/2 the casserole. Bake at 350 for 30-40 minutes. It was DELICIOUS!
