"Chips" and Salsa


I had never made salsa before, but the other day I decided to whip some up. I guess what I made was more or less Pico De Gallo. Regardless, it was delicious!!! I just chopped up what I had on hand: 4 roma tomatoes, some green pepper, some red onion, & cilantro. Then juiced an entire lemon into the mix. YUMM!!!

For the "chips" we made Flax Crackers. Once again from the Primal-Palate site. I actually think next time I will divide it into more than one pan and make it thinner. It was good, but if thinner I think it might have gotten crispier. We have also found it's good to have a "chip" with lunch meat and a slice of tomato (or cheese if you are me).

For the Flax Crackers

Ingredients-

  • 2 cups almond flour
  • 1 cup flax seed meal
  • 1/2 cup whole flax seeds
  • 2 omega 3 eggs, whisked
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon kosher or sea salt


Process-

  1. In a large mixing bowl, stir together almond flour, flax seed meal, eggs, oil, salt, and flax seeds.
  2. Separate dough into two halves (I formed balls).
  3. Line two large baking sheets with parchment paper.
  4. Roll dough between two sheets of parchment paper until it is about 1/8 inch thick.
  5. Score with a knife, or cut with a pizza cutter into 2 x 2 inch squares.
  6. Sprinkle a little extra salt over the top of the crackers.
  7. Bake at 350 for about 12 minutes. We recommend checking the crackers after 10 minutes.
  8. Once cooled, break crackers into squares and enjoy!
