Chicken & Veggie "Noodle" Soup

I made chicken stock for the 1st time in my life!!!! Basically used this recipe HERE:

I bought a container of chopped veggies at Trader Joe's the other day. It had carrots, cabbages, peppers, celery, etc. in it. I cut up an additional carrot, celery, whole onion, and 3 cloves of garlic and sautéed till tender.

After I took my chicken out, strained out the stock, I added it all back into the fresh stock. Does that make sense? Ripped the entire chicken to pieces and put in the soup with all those freshly sautéed veggies!

How does one have noodles if they are eating Paleo? Well, I just threw in all that extra Spaghetti Squash I had leftover from the other night!
HUGE HIT, especially with the 5 year old. She had 3 huge bowls of it!
